STUFFED GREEN PEPPERS 
1 c. chopped onions
1 (1 lb.) can stewed tomatoes
1 1/2 tsp. salt
1/4 tsp. pepper
4 lg. green peppers
1 1/2 qt. boiling water
3 boiled eggs
6 strips bacon
1 lb. sharp cheese
1 c. cracker crumbs

In a saucepan, heat tomatoes and seasonings. Add onions; add chopped boiled eggs. Add cheese, cut up in small chunks. Fry bacon and add crushed bacon to tomatoes; simmer about 20 minutes.

Add cracker crumbs to thicken; par-boil halved green peppers about 15 minutes; drain peppers. Stuff peppers with the tomato stuffing and put in oven and cook about 30 minutes. Cheese can be put on top of each pepper half for a richer cheese taste.
