POTATO PANCAKES 
4 medium potatoes
1 egg, beaten
3/4 c. cracker meal
1 tsp. grated onion (optional)

Grate potatoes, draining off excess water. Add egg and cracker meal. Mix well. Heat well-greased pan. Drop mixture by spoonfuls. Spread evenly and fry both sides until golden brown.

Very good with butter and pancake syrup when onion is not used.
