DILL PICKLED CARROTS 
1 pkg. carrots
1 tbsp. salt
1/8 tsp. cayenne pepper
1 tsp. dill seed
1/2 med. onion, sliced
1 med. pod garlic
1/2 c. vinegar
1/2 c. water

Scrape and cut carrots into thin strips. Pack carrot strips into 1 pint jar. Add all remaining ingredients except vinegar and water. Boil vinegar and water together; pour over carrots. Chill. Will keep in refrigerator indefinitely.
