11 c. unsifted plain flour 1 1/2 c. milk 1 1/2 c. water 2/3 c. sugar 2 tsp. salt 4 beaten eggs 2 pkgs. yeast (not fast-rising) 2 sticks butter Put 9 cups flour in Tupperware fix-n-mix bowl. Make well in center with spoon. Scald milk, cool with water and add next four ingredients. Stir liquid and pour into well of flour. DO NOT STIR INTO FLOUR. Seal and burp bowl. Wait until seal pops off (1 1/2 to 2 hours; if whole wheat or oat flour is used, dough does not rise as much. If seal does not pop off after 2 hours, swirl bowl to build up pressure and wait until seal does pop off.) Melt butter, pour into bowl, and mix. Knead until dough doesn't stick to hands, adding 2 more cups of flour, if needed. Reseal and burp bowl and wait until seal pops off again. Knead and roll into 3 loaves or 7 rolls. If desires, brush uncooked rolls with beaten egg and sprinkle with sesame seeds. Let rise in greased pan 20 minutes. Bake at 375 degrees until brown (rolls - 12 minutes, loaves - 35 minutes). If all the bread or rolls won't be used, cook the extra for a shorter time, freeze, and finish baking when needed. |
