VEGETABLE QUICHE 
1 baked pie shell
1 med. onion, thinly sliced
1 green pepper, chopped
5 eggs
8 oz. sharp Cheddar cheese, shredded
4 c. chopped or sliced cooked vegetables (ex.: Green beans, carrots, broccoli)

Saute onion and green pepper. Cool slightly. Beat eggs until frothy. Add the vegetables and cheese. Pour into crust. Bake at 325 degrees for 40 minutes. Let stand 10 minutes before serving.
