VEGETABLE QUICHE 
2 tbsp. oil
1 onion, chopped
1 clove garlic, minced
1 green pepper, chopped
4 c. broccoli, cauliflower, zucchini, chopped
6 eggs
1 c. grated Cheddar cheese
1/2 tsp. marjoram
1/2 tsp. basil
1/2 tsp. salt
1/4 tsp. curry powder (optional)

Heat skillet with oil and saute lightly the vegetables for 2 minutes. Mix eggs, cheese, salt and herbs. Fold egg mixture into vegetables and pour into an oiled 1 1/2 or 2-quart baking dish. Sprinkle with curry powder if desired. Bake at 325 degrees for 30-40 minutes.
