VEGETABLE QUICHE 
2 tbsp. oil
1 onion, thinly sliced
1 clove garlic, finely minced
1 green pepper, chopped
4 c. broccoli and cauliflower pieces
4 to 6 eggs, beaten
2 c. cubed or grated cheese
1/2 tsp. salt
1/2 tsp. marjoram or basil
1 c. ham, diced, optional

Heat skillet to medium, add oil, add vegetables and saute lightly. Cover and steam for 2 minutes. Fold in eggs, cheese, ham, salt and herbs. Pour in oiled 1 1/2 quart baking dish. Bake 30 to 40 minutes.
