BUTTERMILK WAFFLES 
2 1/2 c. sifted flour
2 1/4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3 eggs, separated
2 c. thick buttermilk
1/3 c. melted shortening or bacon grease
2 tbsp. sugar

Sift flour, salt, soda, and baking powder. Beat egg yolks and add buttermilk and melted shortening. Add to flour mixture. Beat egg whites and sugar until stiff. Fold the egg whites into the batter gradually and until smooth. Bake in hot waffle iron until golden. They are good.
