NORTH GERMAN HERRING SALAD 
1 lg. jar pickled herring (not in cream sauce), diced
1 jar pickled beets, diced, reserve liquid
1-2 apples, peeled, cored & diced
2 eggs, hard boiled, diced
1 potato, boiled & diced
1/2 c. veal or pork, boiled & diced
Capers to taste
Pickles, diced to taste
Onion to taste
Salt to taste
Pepper to taste

Discard juice in herring jar. Combine all diced ingredients to taste. Add enough beet juice until you reach the desired consistency. Potatoes will absorb some of the juice. Cover and let stand a day or two for the flavors to blend. Add salt and pepper if necessary. Sprinkle with diced or shredded hard boiled egg when ready to serve.
