JAM MUFFINS 
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg, beaten
2/3 c. milk
1/3 c. oil

Preheat oven to 400 degrees. In mixing bowl, combine flour, sugar, baking powder and salt. Combine egg, milk, and oil; add all at once to dry ingredients. Mix only until dry ingredients are moistened. Spoon in greased muffin cups, filling 2/3 full. Make a well in center of mixture. Place 1 teaspoon jam on top of batter for each muffin. Press into batter slightly and sprinkle with nuts. Bake 20-25 minutes.
