IRISH SODA BREAD 
4 c. flour
3 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
3/4 tsp. baking soda
6 tbsp. butter
1 1/2 c. raisins
2 eggs
1 1/2 c. buttermilk

Mix dry ingredients and cut in butter. Add raisins. Slightly beat eggs. (Save 1 tablespoon) and add to buttermilk. Add this to dry ingredients. Mix and knead 10 times. (Batter will be sticky.)

Shape in ball. Place in greased casserole or on cookie sheet. (Grease and sprinkle with cornmeal.) Cut cross on top of bread. Brush with egg. Bake at 350 degrees for 1 hour (2 small loaves) or 1 hour and 10 minutes to 1 hour and 20 minutes for large loaf. When still hot brush with butter and sprinkle with sugar. Freezes well.
