SALSA CHICKEN 
4 chicken breasts
1 green pepper, diced
1 (6 1/2 oz.) can whole tomatoes
1 lg. onion, sliced
1 (8 oz.) jar mild or medium salsa
1 sm. can green chilies
Salt and pepper if desired
Sm. can mushrooms; optional

In large baking pan spread sliced onions, then spread drained peppers. Place chicken breasts on top of peppers. Add green chilies, mushrooms. Pour salsa over everything and top with canned tomatoes. Bake at 375 degrees for 1 hour. Serve with white or yellow rice.
