GOVERNOR'S POTATO CASSEROLE 
1 1/2 c. large curd cottage cheese
1 c. scallions, cut into 1/2 inch pieces
5 c. potatoes, peeled, diced and boiled until tender, then cooled
1 c. sour cream
1 clove garlic, minced
1 tsp. salt
1/2 c. shredded American cheese
Paprika

Preheat oven to 350 degrees. Combine cottage cheese, sour cream, scallions, garlic and salt. Fold in potatoes. Pour into a buttered 8 x 8 inch baking dish. Top with cheese and a sprinkle of paprika. Bake 40 minutes. if you don't like crusty cheese, cover casserole for the first 20 minutes or baking.

Serves 6 to 8.
