Trim the rind from a slice of country ham, kind of thick. Rub a heated iron skillet with ham fat. Fry ham over low heat until brown to your liking; turn and brown the other side. A sprinkle of sugar on each side, before cooking intensifies the flavor. Pour about 2 tablespoons of the ham grease into a gravy boat. Brown the residue in the skillet and add 1/2 cup water and bring to a boil. Pour into the grease in the gravy boat. To make a redder gravy, before adding the water, add to the skillet about 1 tablespoon brewed coffee or 1/2 teaspoon sugar.
