LEMON CHEESE CAKE 
6 egg whites
2 c. sugar
1 c. butter
3 c. sifted flour
2 tsp. baking powder
1 c. sweet milk
1 1/2 tsp. lemon extract
1/2 tsp. baking soda

Cream butter and sugar. Mix flour and baking powder and soda and sift three times. Flavor with lemon extract. Add flour mixture alternately with milk. Bake at 350 degrees for 25 minutes in 3 (8" or 9") greased and floured pans.

FILLING:

8 egg yolks, well beaten
1/2 c. butter
2 lemons (the juice & grated rind)
1 c. sugar

Cream butter and sugar, add yolks and lemons; cook in double boiler until thick. Spread between layers and on top. Coconut may be added to top and sides.
