ORANGE SNOWFLAKE SALAD 
1 c. sm. curd cottage cheese
2 c. pineapple tidbits, drained
1/2 c. chopped celery
1 tbsp. grated onion
1/2 c. pineapple juice
2 tbsp. lemon juice
1/2 c. water
Pinch of salt
1 (6 oz.) pkg. orange Jello
1/8 tsp. powdered ginger
2 c. ice water

Place cottage cheese, pineapple tidbits, celery, and grated onion in a loaf pan or mold. Heat pineapple juice, lemon juice, 1/2 cup water and salt together in a sauce pan. Remove from heat; stir in Jello, ginger and ice water. Pour Jello mixture over ingredients in the pan, stirring gently to separate cheese. Chill until firm. Serve garnished with a dollop of mayonnaise and a sprig of parsley.
