BROCCOLI-TOMATO EIFFEL TOWERS 
1 (10 oz.) pkg. frozen broccoli
3 lg. tomatoes
3/4 c. shredded Swiss cheese
1 heaping tbsp. mayonnaise
2 tbsp. onion, finely chopped
1/2 tsp. thyme
2 tbsp. bread crumbs

Prepare broccoli according to package directions; drain and chop into sm. pieces. Set aside. Cut the tomatoes into 4 slices each, sprinkle with salt and place on non-stick sprayed baking sheet.

Combine the broccoli with 3 tablespoons of the cheese, mayonnaise, onion, and thyme. Spoon on top of tomato slices. Broil 5 inches from heat, about 10 minutes or until hot. Remove from oven and sprinkle with remaining cheese and the bread crumbs. Return to broiler for 1-2 minutes, or until lightly browned and the cheese is melted. Serves 6.
