STUFFED BAKED HEN 
4-7 lb. dressed baking hen
2 c. cooked rice
1/2 c. chopped celery
1/4 c. chopped onion
2 tsp. salt
1 tsp. black pepper
1 tsp. poultry seasoning

Salt the cavity of the whole hen. Combine stuffing ingredients and stuff hen. Place bird on aluminum foil. Put leftover stuffing around bird. Fold edges of foil to seal; bake at 325 degrees for 3 1/2 to 4 hours.

NOTE: If a genuine roasted taste is preferred, roast hen in open pan at 325 degrees for 4 hours. Keep a thin cloth, soaked in oil, over bird to keep skin from drying out.
