TOMATO DILL SOUP | |
3 lg. tomatoes 1 med. onion, sliced 1 sm. clove garlic 1 tsp. salt 1/4 tsp. ground pepper 2 sprigs fresh dill 1 tbsp. tomato paste 1/4 c. cold water 1/2 c. cooked macaroni 1 c. chicken stock 3/4 c. cream Peel and slice the tomatoes into a saucepan. Add onion, garlic, seasonings, dill, tomato paste and water, cover and simmer 12 to 15 minutes. Transfer to container of food processor. Add macaroni, cover and blend briefly. With motor running, add stock and the cream. Serve hot, room temperature or chilled, garnished with chopped fresh dill and tomato. Serves 6. Cooked tomatoes and onions are so naturally sweet this could almost be dessert! |
