HAM CROQUETTES 
3 tbsp. butter
1/4 cup all-purpose flour
3/4 cup milk
2 cups coarsely ground cooked ham (I use leftovers)
1 tsp. grated onion
2 tsp. mustard
3/4 cup dry bread crumbs (very fine)
1 egg, slightly beaten
2 tbsp. water

Melt butter; blend in flour. Add milk all at once. Cook and stir until thick and bubbly; cook and stir 1 minute more. Remove from heat. Add ham, onion and mustard. Chill well.

Shape mixture into 8 to 10 balls. Roll in bread crumbs. Shape into cone, handling lightly.

Combine egg and water; dip cone in mixture and roll again in crumbs.

Fry in deep, hot oil (365°F) for 1 1/2 to 2 minutes. Drain on paper towels.
