VIDALIA ONION CASSEROLE 
5 lg. Vidalia onions
2 sticks butter
24 Ritz crackers, crumbled
Parmesan cheese
1 can French fried onion rings

Peel onions and slice into thin rings. Saute sliced onions in butter for 15-20 minutes or until clear. Put half of the onions into a casserole. Top with half of the crumbs and sprinkle with the cheese. Repeat layers, ending with cheese. Bake, uncovered in a 325 degree oven for about 30 minutes.

To dress up casserole, top with canned French fried onion rings at last moment. Allow them to heat through, then serve. Note: A little milk or cream may be added to the onions after they have been sauteed or if they are a little dry after baking.
