VIDALIA ONION PIE 
4 c. Vidalia onions, sliced 1/4" thick
2 eggs, beaten
1 1/2 c. milk, scalded
1 c. Cheddar cheese, grated

CRUST:

1 1/2 c. cracker crumbs
1/2 c. butter, softened

Mix well the crust of cracker crumbs and butter. Press firmly into 9 inch pie pan, set aside. Place onions in heavy skillet with just enough water to cover. Bring to boil and simmer 15 mintues or until transparent. Drain well and place in crust.

Stir milk and eggs together. Pour over onions and spread grated Cheddar over top. Bake at 325 degrees for 60 minutes. Great bake ahead dish.
