SWEET AND SOUR VIDALIA ONIONS 
5 lg. Vidalia onions
1/4 c. cider vinegar
1/2 c. brown sugar
1/2 c. melted butter
1/2 c. boiling water
1 c. coarse homemade bread crumbs and 1 tbsp. butter; optional garnish

Heat oven to 300 degrees. Slice onions and arrange in a 1 1/2 quart baking dish. Mix vinegar, melted butter, boiling water and brown sugar. Pour over onions.

Bake covered for 30 minutes. Uncover and top onions with the bread crumbs and dot top with butter (if using). Continue baking uncovered, until onions are tender and crumbs are golden, about 30 minutes. Serve warm.
