PEANUT CHICKEN 
6 pieces chicken breast, skinned and boned
1/2 c. soy sauce
Garlic salt to taste
Ginger powder to taste
1/4 c. powdered chestnut flour
1/4 c. cornstarch
1/2 c. chopped peanuts
1/2 c. chopped green onion

SAUCE:

1 tsp. oil
3/4 c. sugar
Pinch of salt
1 tbsp. red vinegar
1 clove garlic, crushed
4 tsp. cornstarch
3/4 c. ketchup
2 c. water

Mix soy sauce, garlic salt and ginger powder together. Marinate chicken in this mixture for one hour.

Sift chestnut flour and cornstarch. Remove chicken and roll in flour mix. Brown chicken in 1 inch deep oil at 325 degrees, remove and drain on paper towel or rack. Slice when cool, and put on bed of shredded or sliced lettuce.

Mix sauce ingredients and heat until hot. Sprinkle green onions and peanuts over top of sliced chicken. Pour heated sauce over chicken. Serves 6.
