HAWAIIAN NUT BREAD 
2/3 c. sugar
1/3 c. vegetable shortening
2 eggs
1 c. mashed ripe banana, about 2 med.
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped pecans
2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Butter or cream cheese, room temperature

Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan. In large bowl, cream sugar and shortening until fluffy; beat in eggs. Stir in mashed bananas, drained pineapple and nuts. In medium bowl, combine flour, baking powder, baking soda, and salt. Stir into banana mixture until smooth. Spoon into prepared pan. Bake 50-60 minutes in preheated oven. Remove from pan; cool on rack. Wrap airtight in foil or plastic wrap; let stand overnight for easy slicing. Serve sliced with butter or cream cheese.
