HAWAIIAN NUT BREAD 
3 c. flour
1 tsp. cinnamon
1 tsp. salt
2 c. vegetable oil
8 oz. crushed pineapple, drained
1 c. chopped pecans
3 bananas, mashed
2 c. sugar
1 tsp. baking soda
2 tsp. vanilla
3 eggs, beaten with fork
1 c. angel flake coconut

Preheat oven to 350 degrees. Grease and flour loaf pans. Sift together flour, sugar, cinnamon, soda, salt. Set aside. Combine vegetable oil, vanilla and eggs, then mix with dry ingredients until moist. Fold in pineapple, pecans, bananas and coconut. Pour into loaf pans. Bake approximately 1 hour or until brown. Makes 4 to 5 small loaves.
