"SUGAR-FREE" DATE CAKE SQUARES | |
1 1/4 c. water 1 c. chopped dates 3/4 c. chopped prunes* 1/2 c. dark raisins 8 tbsp. butter, cut up 2 eggs 1 tsp. vanilla 1 c. flour 1 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. salt 1/4 c. chopped pecans 18 packets Equal or 3/4 c. Equal Spoonful Combine water, dates, prunes and raisins in saucepan. Heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed. Remove from heat. Add butter. Stir until melted. Cool. Mix eggs and vanilla into fruit mixture. Mix in flour, Equal, soda, cinnamon, nutmeg and salt. Spread batter evenly in greased and floured 11 x 7 x 2-inch pan. Sprinkle with nuts. Bake in preheated 350°F oven until cake springs back when touched, 30 to 35 minutes. Cool on wire rack. Cut into squares. |
