SNICKERDOODLE COFFEECAKE 
1 1/3 c. flour
1 tsp. cream of tartar
1/2 tsp. baking soda
Dash of salt
1/2 c. butter, softened
3/4 c. and 1 tbsp. sugar, divided
1 egg
1 c. raisins
1 tsp. cinnamon

Preheat oven to 375 degrees. Sift together flour, cream of tartar, baking soda and salt; set aside. In a mixing bowl, cream together butter and 3/4 cup sugar until light and fluffy. Beat in egg. Stir in flour mixture and raisins. Spoon into greased 8 inch square baking pan.

Combine remaining sugar and cinnamon. Sprinkle over batter. Bake about 25 minutes or until a toothpick inserted in center comes out clean. Cool in pan. Cut into squares. Delicious served warm.
