SOUR CREAM-PUMPKIN COFFEECAKE 
1/2 c. butter
3/4 c. sugar
1 tsp. vanilla
3 eggs
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 c. sour cream
1 3/4 c. (16 oz.) pumpkin
1 beaten egg
1/3 c. sugar
1 tsp. pumpkin pie spice

Cream butter, 3/4 cup sugar and vanilla. Add 3 eggs. Combine dry ingredients then add to batter mixture alternately with sour cream. Combine last 4 ingredients. Spoon 1/2 batter into greased 13x9 dish. Spread to corners. Sprinkle 1/2 streusel over. Spread pumpkin mix over. Spread remaining batter over. Sprinkle streusel over top. Bake at 325 degrees 50-60 minutes or toothpick in center comes out clean.

STREUSEL:

1 c. brown sugar
1/3 c. butter
2 tsp. cinnamon

Mix together.

You may use 16 ounce canned sweet potatoes in place of pumpkin.
