KENTUCKY BLUEGRASS FUDGE PIE 
2/3 c. all purpose flour
1/2 c. unsweetened cocoa powder
1 1/2 c. chopped walnuts
1 c. sugar
2 eggs
3 tsp. vanilla
1/4 tsp. salt
1/2 c. butter
1 pt. ice cream (optional)

Grease an 8 x 1 1/2 inch cake pan. Preheat oven to moderate (350 degrees). Combine flour, cocoa, and salt on wax paper. Spread walnuts in a shallow pan. Toast in oven stirring often, for 10 minutes; cool; reserve. Beat butter, sugar, eggs and vanilla in a medium size bowl until light and fluffy. Stir in flour mixture until well blended. Stir in toasted walnuts. Turn into prepared pan. Bake in preheated oven (350 degrees) for 30 minutes or until a wooden pick inserted in the center come out with moist crumbs. DO NOT OVERBAKE. Cool on wire rack. Remove from pan. Spoon ice cream onto center of pie. Cut into pie shaped wedges.
