ZUCCHINI BREAD 
3 eggs
2 c. sugar
2/3 c. Crisco oil
2 c. grated zucchini
2 1/4 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1/4 tsp. baking powder
2 tsp. vanilla

Beat eggs foamy, add oil, sugar, mix. Add zucchini, combine dry ingredients. Stir in zucchini mixture. Add vanilla and nuts. Stir gently. Pour batter in 2 greased and floured 9x5 inch pans. Bake at 325 degrees for 1 hour. Cool 10 minutes. Remove from pans.
