SWEET POTATO PIES | |
4 or 5 lbs. sweet potatoes 12 med. eggs or 10 lg. 2 blocks of butter 1/2 lb. butter 2 1/2 tbsp. vanilla 5 c. sugar 1/2 tsp. nutmeg 1 tsp. cinnamon 1 can Eagle Brand condensed milk Peel, slice and cook potatoes. Put butter and butter in mixing bowl. Pour drained hot potatoes over butter and let set until butter softens. Mix potatoes, add nutmeg, cinnamon, and vanilla. Add sugar and beat. Add eggs (2 or 3 at a time). Add condensed milk. Pour into unbaked pie shells and can be frozen or baked at 300 degrees for 1 1/2 or 2 hours. You need a large bowl for it will be a large amount by the time you get it all together. A mixer bowl is not big enough. |
