COCONUT LIMEADE 
1 1/2 c. shredded coconut
3 c. water
7 tbsp. lime juice
2 c. cracked ice

Combine coconut and water in sauce pan. Place over low heat and bring to a boil. Cover and simmer 10 minutes. Remove from heat and cool. Strain through a fine sieve. Add lime juice and sugar to coconut - flavored water. Stir until sugar dissolves. Add cracked ice and serve at once in tall glasses. Garnish with mint and maraschino cherries if desired. Makes 4 to 6 servings.
