PUMPKIN WALNUT BREAD 
1 1/2 c. pumpkin puree or canned pumpkin
1/2 c. vegetable oil
1/3 c. water
2 eggs or 1 egg and 2 egg whites
2 c. flour
1 1/4 c. sugar
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. finely chopped walnuts

1. Preheat oven to 350 degrees.

2. Lightly grease and flour 2 loaf pans, 4 1/2 x 8 1/2 inch.

3. Combine pumpkin, oil, water and eggs.

4. In a separate bowl mix flour, sugar, baking soda, nutmeg, cinnamon and salt.

5. Combine two mixtures and stir thoroughly. Stir in chopped walnuts.

6. Pour batter equally into two pans.

7. Bake for one hour. Allow to cool.
