ORANGE UPSIDE-DOWN FRENCH TOAST 
1/4 c. butter
1/3 c. sugar
1/4 tsp. cinnamon
1 tsp. grated orange rind
4 eggs
2/3 c. orange juice
8 slices white bread

Place butter on cookie sheet and melt in 400 degree oven. Mix next 3 ingredients and sprinkle evenly over butter.

Mix eggs and orange juice and dip bread, soaking well. Arrange in pan and spoon any remaining egg mixture over bread. Bake in hot oven, 400 degrees, about 25 minutes or until golden brown. Let stand 1 minute then lift out, sugar side up onto hot platter. Serve plain or with maple syrup.
