CAULIFLOWER MASALA 
1 lb. cauliflower florets
3 tbsp. ghee or oil
1/2 tsp. brown mustard seed
1/2 tsp. cumin
Pinch fenugreek
1/2 tsp. turmeric
3 slices fresh ginger root, very finely chopped
2 cloves garlic, finely chopped
1 med. onion, finely sliced
1 lg. tomato, chopped
1 fresh green chile, sliced
1/2 tsp. salt
Black pepper

Heat ghee and add mustard seeds, cooking until mustard seeds pop. Add cumin, fenugreek, turmeric, ginger, garlic and onion. Cook and stir 3-4 minutes. Add cauliflower and fry for 2 more minutes. Add tomato, chili, salt and pepper. Cook until tomato softens. Cover and cook gently until the cauliflower is tender. Serves 4.
