IMPOSSIBLE PUMPKIN PIE
(Microwave)
 
1 can (16 oz.) pumpkin
1 can (13 oz.) evaporated milk
2 tbsp. butter, softened
2 eggs
3/4 c. sugar
1/2 c. Bisquick
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Grease microwavable pie plate, 10 x 1 1/2 inch. Beat all ingredients until smooth, 2 minutes with hand mixer. Pour into plate. Microwave on inverted microwavable dinner plate on medium high (70%), rotating pie plate 1/4 turn every 5 minutes, until knife inserted in center comes out clean, 22-28 minutes. Cool on flat, heat proof surface. (Do not cool on wire rack.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
