MAMA MARY'S IMPOSSIBLE PUMPKIN
PIE
 
This pie makes its own crust!

3/4 cup sugar
1/2 cup Bisquick baking mix
1 2/3 cups milk
2 tbsp. butter
2 eggs
1 (15 oz.) can pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. pure vanilla extract
Cool Whip (optional)

In a large mixing bowl combine all ingredients and beat until smooth. Pour into a greased 10-inch pie plate (I use Pyrex). Bake at 350°F degrees for 50 to 55 minutes.

Serve topped with Cool Whip.
