EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

Just made the first round and my mother loves them. Added the 2 eggs, tsp of vanilla and cinnamon and 2/3 cup flour. And I half the white sugar with brown sugar. Mmmm. I like them and I don't like oatmeal cookies!! Though, I belended the butter and sugar with an egg beater and then added the vanilla and one egg at time. After I added the flour, baking soda and cinnamon, blended. Then I stirred in the oats. Had to spoon the dough onto cookie sheets. I used parchment paper to line the cookie sheets.

I know my family new oatmeal cookies recipe.

LOL! I figured out the Splenda. For anyone else wanting to know, it's 1 to 1 (if recipe calls for 1 cup sugar, use 1 cup Splenda).

I halved the recipe and forgot to half the Baking Soda .. they're in the oven now and I'm hoping it turns out okay. I added 1 egg, cinnamon, Vanilla and 1/4 cup unsweetened apple sauce but forgot that 1 stick of butter equals 1/2 cup and used almost a full stick that was left over in fridge .. so I got a little extra butter. Was a little pasty and was difficult to "roll" into balls and then they didn't flatten well as they stuck to my hand. Well, next time I'll do better!

I'm legally blind and this looks great for me to make. I'll use the 2 eggs, extra flour and cinnamon, but since I'm diabetic how much Splenda should I use in place of the sugar? Looking forward to trying these.

I made these cookies, I added the eggs and I added 1 mashed banana, a couple tbs sunflower seeds, and a cup of peach Greek yogurt and a little honey, cinnamon and nutmeg. Super awesome! These where the first cookies I have ever made from scratch, go bachelors! :D

I just made these and I'm glad I took the time to read a lot of the comments. I added cinnamon, 2 eggs, and about 1/2 cup more of flour. I usually bake with butter but had none at the time. I used 1/2 c margarine and 1/2 c oil and smashed a banana in the mix, and used equal parts of brown sugar and granulated. Sprinkled powder and cinnamon on top after I took them out and they were pretty and tasty. Can't wait to make these again and add raisins and nuts.

This was a great starter receipe. I substituted smart balance and coconut oil for the butter, 1/2 cup spenda brown sugar mix and stevia for the sugar, added unsweetened dried cranberries and unsweetened coconut flaks. I also only used 1/2 cup of flour. They came out great and was still quick and easy - Thank you :-)
