SEAFOOD CASSEROLE 
1 c. celery
1/2 c. onion
1 green pepper
1/2 stick butter
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
Dash cayenne pepper
1/2 tsp. Worcestershire sauce
1/2 c. sherry
2 c. milk
1 c. mayonnaise
1 can crabmeat
1 can shrimp (or any shellfish)
2 c. cooked rice
Bread crumbs
Parmesan cheese

Chop celery, onion and green pepper finely and saute in 1/2 stick butter 10 minutes.

Make a white sauce of 3 tablespoons butter, flour, salt, cayenne, Worcestershire sauce, sherry and milk. Combine sauteed vegetables with sauce and add mayonnaise, crabmeat and shrimp or other shellfish.

Line baking dish with butter and add 2 cups cooked rice. Pour mix over rice. Top with buttered crumbs and Parmesan cheese. Bake at 350 degrees for 30 minutes.
