FISH CORN CHOWDER 
Seasoned White Sauce (see recipe)
1 can (16 oz.) whole kernel corn, undrained
3/4 c. chopped onions
1/2 c. chopped celery
1 tsp. dried leaf thyme
1/2 to 1/4 tsp. dried basil
1/4 tsp. salt
1/2 tsp. Tabasco pepper sauce
2 c. potatoes, peeled, cubed
1 lb. fillet of flounder, cut in pieces

Make double recipe Seasoned White Sauce (see recipe). Add corn with liquid, onions, celery, thyme, basil, salt and 1/2 tsp. extra Tabasco. Cook over medium heat for 10 minutes, or until vegetables are tender.

Meanwhile, cook potatoes in 2 cups salted water until tender, about 10 minutes. Add potatoes and salted cooking water to the chowder, add fish pieces. Cook over low heat 5 minutes or until fish flakes easily with fork. Serves 6 to 8.
