ZUCCHINI BREAD 
1 1/4 c. 100% Bran and Oat Bran cereal
1 1/2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. pumpkin pie spice
1 1/2 c. brown sugar, packed
1 c. butter
3/4 c. Eggbeaters
2 tsp. vanilla
2 c. shredded zucchini
1 c. chopped apple
1/2 c. chopped nuts

Preheat oven to 350 degrees. Combine first 5 ingredients; set aside. With mixer, beat brown sugar, butter, Eggbeaters and vanilla together. Stir in zucchini, apples, nuts and bran mixture. Grease and flour 2 small loaf pans or 1 (9x13 inch) pan. Bake for 40-45 minutes. Cool. Refrigerate for 24 hours before serving.
