ZUCCHINI BREAD 
2 eggs
2 c. sugar
1 tsp. vanilla
1/4 tsp. baking powder
1 tsp. salt
1 c. walnuts
1 c. corn oil
2 c. peeled and grated zucchini
3 c. flour
2 tsp. pumpkin pie spice
1 c. pineapple

Beat egg, sugar, oil, and vanilla; set aside. Sift flour, salt, baking powder, and pumpkin pie spice. Stir in egg, sugar, and oil mixture. Pour into 2 well greased 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 60 to 75 minutes.
