BAKED TOMATOES | |
6 tomatoes 1/3 c. olive oil 1/4 c. chopped parsley 2 garlic cloves, chopped 3 tbsp. basil, chopped 1/3 c. grated Parmesan cheese 1/3 c. dry unflavored bread crumbs Salt and freshly ground pepper to taste 2 tbsp. olive oil Preheat oven to 350 degrees. Wash/dry tomatoes. Cut in half. Using a small spoon, remove seeds from tomatoes. Drain tomatoes cut side down on paper towels for 15-20 minutes. Combine 1/3 cup oil, parsley, garlic, and basil, Parmesan cheese, bread crumbs, salt and pepper in a medium bowl. Divide between tomato halves. Place tomatoes in a 13x9 inch baking dish. Spoon 2 tbsp. oil over tops of tomatoes in dish. Bake 25-30 minutes or until filling is crisp and golden. Serve hot. Makes 6-8 servings. |
