ZUCCHINI/TOMATO BAKE 
2 sm. zucchini, sliced
1 sm. chopped onion
3 med. tomatoes, sliced
1 c. crushed croutons
Salt & Pepper to taste
1 c. shredded cheddar cheese

Layer 1/2 of zucchini, onion and tomatoes in buttered casserole. Add croutons. Repeat layering with tomatoes on top. Cover and bake at 350 degrees for 1 hour. Uncover, cover with cheese. Return to oven until cheese melts. Optional: Sprinkle with Parmesan cheese. Serves 4.
