1 med. cauliflower
1/2 c. mayonnaise
1/2 mustard
1/2 sharp Cheddar cheese, grated
Hot sauce, optional

O.K., this one will make you a believer into how great this veggie can be. First place whole heart of cauliflower into pot of water and boil for about 15 minutes. You can test for doneness by sticking a fork into heart of cauliflower it should just go in. No mush allowed. At the same time be heating your oven to 350 degrees. Drain cauliflower and place on flat pan stem down.

Mix mayonnaise, mustard and cheese together (hot sauce for some spice) and spread over top of cauliflower. Stuff that puppy into the oven until it turns golden brown (about 15 minutes) and she's done! Great with roast chicken.
