SWEET CITRUS SALMON WITH COLD
MANGO SALSA
 
4 fresh salmon fillets (the best quality you can get)

GINGER LIME MARINADE:

1 tbsp. ginger, minced
2 limes, juiced
1 tbsp. lime peel, grated fine
2 tbsp. brown sugar
olive oil
salt and pepper, to taste

In a small bowl whisk together ginger, lime juice and peel, and brown sugar. Drizzle about 1/2 tablespoon of olive oil into the marinade and whisk to combine, season with salt and pepper. Arrange salmon fillets in a large, roomy baking dish. Pour marinade over the salmon, cover and chill for at least 4 hours.

FRESH COLD MANGO SALSA:

2 fresh mangoes, peeled and diced
1 red onion, chopped
1 bunch green onions, chopped
1/4 cup cilantro, minced
2 tbsp. orange juice
olive oil
salt and pepper, to taste

In a large mixing bowl combine mangoes, both onions, cilantro, orange juice and about 2 tablespoons olive oil. Season with salt and pepper, mix well. Cover and chill until you are ready to serve salmon.

Cook salmon in a 350°F oven until flaky, don't over cook!

TO SERVE:

minced cilantro, for garnish
freshly ground black pepper

Arrange one fillet on each of 4 plates. Spoon generous portions of salsa over each fillet, garnish with minced cilantro and fresh ground black pepper. Serve hot and enjoy!
