LUSCIOUS LEMON SQUARES 
CRUST:

1 c. flour
1/4 c. confectioners sugar
1/2 c. butter

Mix flour and sugar and then cut in butter.

Press mixture into 8-inch square ungreased pan and bake at 350 degrees for 10-12 minutes.

Meanwhile, beat together 2 eggs; then add 3/4 cups granulated sugar and 3 tablespoons lemon juice. Beat for 8 minutes and then add 2 tablespoons flour and 1/2 teaspoon baking powder. Mix until just smooth.

Pour over crust and bake 20-25 minutes. Cool and sift confectioners sugar on top and cut into 1 1/2-inch squares. Makes 32 squares. Top will be soft.

NOTE: Recipe can be doubled and baked in 9 x 13-inch pan.
