IRISH SODA BREAD | |
4 c. flour, sifted 1 tsp. baking soda 1 tsp. salt 1 c. sugar 3/4 c. butter 1 c. raisins or currants 1 tbsp. caraway seeds 1 1/3 c. buttermilk Yolk of egg to brush on top of bread Sift salt, flour and sugar into mixing bowl. Cut butter into mixture, add raisins and seeds. Toss well to blend. Gradually add buttermilk to make soft dough. Shape into 2 round loaves. Flatten loaves slightly, add cross (with scissors). Take pastry brush and brush egg yolk over tops. Bake at 350 degrees for one hour. |
