JENNY'S IRISH BREAD | |
2 1/2 c. flour 2 tsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 1/4 c. butter 1/2 c. sugar 1 egg 1 1/2 c. buttermilk 1 c. raisins 1/2 c. currants (optional) 1 tbsp. caraway seeds Sift together flour, powder, soda and salt; set aside. Cream butter and sugar. Add beaten egg and buttermilk; blend well. Add liquid mixture to dry ingredients. Mix by hand until dry ingredients are well moistened. Fold in raisins, currants and caraway seeds. Pour into greased 1 1/2 quart glass casserole. Brush top with melted butter. Sprinkle with a little sugar. Bake at 375 degrees for 30 minutes. Then reduce to 325 degrees for about 30 minutes longer. Test in the middle of the loaf before removing from the oven. Enjoy. |
